There is a whole body of research which extols the benefits of coconut oil. I am particularly interested in the benefits concerning brain health. Trying to integrate coconut oil into my diet proved to be tricky, however. Although I like coconut, I found the taste of the oil unpleasant and overpowering.
In time, however, I found a good way to get about a 1/2 teaspoon every day. I add it to my 10 oz thermos of green tea each morning!!
